AVA: Happy Canyon of Santa Barbara
COMPOSITION: 88% Cabernet Sauvignon, 12% Cabernet Franc
WINEMAKING NOTES: Sourced from 3 different vineyards within Happy Canyon, this wine features three clones of Cabernet Sauvignon (337, 15, 8) along with a generous dose of Cabernet Franc. These lots were harvested by hand between September 15 and October 25, and then hand-sorted, de-stemmed and fermented in small stainless steel tanks. The components were racked to blend after a year in small French oak barrels, and then spent another 6 months in barrel before being bottled in July 2014.
TASTING NOTES: This wine displays a deep garnet color, and aromas of Asian plum, raspberry, Bing cherry and hints of wild thyme. Medium to full-bodied, tight-knit and very fine in the mouth, with broad, polished tannins and bright notes. This is classically structured Cabernet Sauvignon that drinks well now, but will continue to positively evolve for the next decade.
